Summer Squash

Squash is thought to have been cultivated by American Indians for over 5000 years. They come in as many different varieties and shapes. Smaller summer squash has soft, moist flesh that cooks fast and tastes the best. Larger, mature squash are better for stuffing and baking. Squash is low in calories and high in vitamin A and potassium.
